Amid the rolling hills of Montes de Toledo lies Bodegas NOC, a modern winery with a history dating back more than a century. Originally established as a family business, it is a place where tradition and progress go hand in hand. Across fifty hectares of vineyards, situated between 750 and 900 meters above sea level, grapes grow in poor, mineral-rich soils under the influence of sharp temperature fluctuations. These conditions result in fresh wines with energy and balance.
From heritage to innovation
While the winery’s roots go back to the early twentieth century, it is the contemporary approach that sets Bodegas NOC apart. In the vineyards, Viognier and Chardonnay are cultivated for white wines, and Tempranillo, Syrah and Petit Verdot for reds. Each variety is vinified separately, with close attention to what the grape and the site require.
The vineyards are managed sustainably, without artificial interventions and with full respect for the ecosystem. The result is a range of wines that reflect their origin, with purity and character at the core.
Fresh, precise and distinctive
The house style is fresh, clean and layered. The range is broad, from still wines to sparkling wines made using the traditional method. Brut Rosé made from Tempranillo is refined, fruity and softly sparkling. Viognier Lías shows ripe white fruit, subtle florality and a long finish. And the red Leyenda de NOC, aged in French oak, combines structure, depth and a touch of spice.
All wines are bottled unfiltered and meet strict quality standards, preserving their aromatic expression.
