Collaboration along the banks of the Duero
Bodegas Covitoro was founded in 1974 by a group of winegrowers from Toro, driven by the desire to grow stronger together and further improve the quality of their wines. What began as a local cooperative has grown into one of the best-known wineries within D.O. Toro. Since the first commercial harvest in 1978, Covitoro has been producing wines that combine the strength of the region with refinement and precision.
Old vineyards and Tinta de Toro
The vineyards lie along the Duero River, in an area marked by hot summers, cold winters, and poor soils of sand, clay, and stone. These conditions produce grapes with concentration, structure, and character. The leading role belongs to Tinta de Toro, the local variant of Tempranillo, known for its deep color, ripe fruit, and firm structure.
Covitoro owns a significant share of some of the oldest vineyards within the denomination, with certain vines more than eighty years old. These old vines give the wines additional depth, complexity, and concentration.
Modern winemaking with respect for origin
Although tradition remains an important foundation for Covitoro, the winery works with modern techniques and a strong focus on quality. In the cellar, temperature-controlled fermentation, careful selection, and aging in French and American oak ensure balance and precision.
Alongside red wines made from Tinta de Toro, Covitoro also produces white and rosé wines, including varieties such as Malvasía and Verdejo. The range includes young, fruit-driven wines as well as powerful crianzas and selections from old vines.
Quality and sustainability
At Covitoro, quality is central from vineyard to bottle. The cooperative works with attention to sustainability, biodiversity, and modern production methods that minimize environmental impact. At the same time, the human aspect remains essential: nearly two hundred winegrowers contribute their knowledge and experience to the character of the wines.
