Amadís de Gaula is the result of a unique collaboration between a group of passionate gastronomes and an experienced winemaker. United by their shared love of gastronomy, art, and wine, they set out to create something new: characterful wines with personality, crafted for an audience that expects just a little more. Winemaking without borders
The philosophy of Amadís de Gaula is the opposite of uniformity. Instead of operating from a single location, winemaking takes place at various sites throughout Castilla-La Mancha, making the most of the region’s diverse terroirs. Grapes are sourced from vineyards on the plateau (650–700 metres altitude) as well as from higher plots reaching up to 1000 metres. This spread not only enhances flavour complexity, but also provides resilience in the face of extreme weather conditions such as drought or frost. Ageing and bottling take place at one central location: Campo de Criptana, in the heart of the region.
The craftsmanship of Paco Granado
Winemaker Paco Granado brings decades of experience. He grew up among the barrels of Domecq, began his career in Tomelloso, and later became responsible for successful wine lines such as AÑIL, Indigo, and Vidal del Saz. His approach is broad, meticulous, and innovative: from market analysis to production, from sparkling wines to large-scale lines. Yet his heart lies with family-owned wineries, where he can work each year with different grape varieties, climates, and techniques. It’s in that creative freedom where his talent truly flourishes. Tasting is his most valued tool, and he is a frequent jury member at national and international wine competitions.

Amadís de Gaula uses Allier French oak – a classic choice that adds structure and finesse to the wines. Thanks to the varied vineyard locations and altitude range, the wines combine freshness with depth. The result: elegant reds with body, refined whites, and vibrant blends with character. This is not a standard range, but a collection of wines with a personal story – for wine lovers with a curious palate.
