Getariako Txakolina is a wine-growing area around the Getaria and Zarautz in the province of Gipuzkoa, Basque Country, in Northeast Spain. Txakoli is a lightly sparkling white wine that is traditionally poured into a glass from a height.
D.O. Getariako Txakolina groups together the producers of txakoli in the province of Gipuzkoa who make their txakolis under the parameters established by the managing body of the appellation of origin D.O. Getariano Txakoli.
Since ancient times, the wine and therefore the vineyard, have been protected in one way or another.
What style are the wines from Do Getariano Txakoli?
The region is particularly famous for its txakoli (or chacolí), a traditional, lightly sparkling white wine made primarily from the Hondarrabi Zuri grape. Txakoli is known for its fresh, crisp acidity, green apple notes, and slight effervescence.
Why is txakolina effervescent?
The effervescence is achieved through the alcoholic fermentation process, where carbon dioxide (CO2)
is produced and trapped in the wine. This creates the characteristic slight fizziness or effervescence that
is a hallmark of Getaria txakoli.
Grape variety
Txakoli is made from Courbu variety grapes, known in Spain as Hondarrabi Zuri (white) and Hondarrabi Beltza (red; the latter much less widespread). This difficult to grow variety has the characteristic of giving an acidic, fresh, and easy to drink wine.
